layer 1 : 3 Cups fresh Basil 5 Cloves Garlic 1/3 cup Parmesean Cheese ½ pt olive oil 1/3 - ½ cup pine nuts Line dish with saran wrap or foil. Mix above ingredients in food processor and spread in dish as bottom layer. layer 2 : about 20 sun-dried tomatoes not packed in oil @ 1 cup diced tomatoes (small) Add hot water to sun-dried tomatoes to 'plump them', being sure to not pack them, and let stand for 15 minutes. Next, add them to the food processor along with 1 can of drained diced tomatoes and process to the desired consistency. layer 3 : Spread 2 packages of softened cream cheese as top layer. Refrigerate. When hardened, turn upside down to unmold and serve. |

White Chili | Main Dish | Sherry (from Janie Rodriguez) | 3 (16 oz) cans Breat Northern White Beans
4 cups cooked/chopped chikcen breasts 1 Tblsp Olive Oil 2 medium onions chopped finely 4 cloves garlic 2 (4 oz)cans chopped green chilis 2 tsp cumin 1 1/2 tsp dried oregano 1/4 tsp cayenne 6 cups (about 3 cans) chicken stock 3 cups grated cheese 12 oz sour cream Heat oil, add onion and soute until clear. Stir in garlic, chilis, cumin, oregano. Saute another 2 minutes. Add undrained beans and broth and bring to a boil. Reduce heat, add chicken and cheese. Stir until cheese melts. Salt and pepper to taste. Garnish with sour cream. |

KetchiKan Crab Squares | Main Dish | Mom Murdough | 2 cans crescent rolls
1/2 cup salad dressing (mayonaise or miracle whip) 2 tsp lemon juice 1/8 tsp pepper 2 cups shredded sharp cheddar cheese 2 cups artifical crab, flaked 1/2 cup grated onion 1 Tblsp chopped parsley Unroll dough into 4 rectangles. Place in 15 x 10 pan. Press into bottom and halfway up pan. Bake @375 for 10 minutes. Mix salad dressing, lemon juice, pepper until blended. Add cheese, crab, onions, parsley. Mix. Spread mixture over crust and continue baking 12-15 minutes until cheese is melted. Let stand 5 minutes. Cut into squares. |
